Banana Bread Recipe

Here's a yummy, low-fat, sugar free (honey instead of sugar) banana bread recipe I made today:

3 ripe bananas
2 eggs, beaten lightly
1 c. whole wheat pastry flour
1 c. unbleached all-purpose flour
3/4 c. honey
1 tsp salt
1 tsp baking soda

Mash bananas, add eggs, add everything else & stir. Bake 1 hour (watch, depends on your stove) at 350 in loaf pan.

Variations: You can use two cups of whatever flour you have on hand. You can also add chopped nuts, pinch of cinnamon, etc.

That recipe sounds really good! I'm going to try it when I get a chance. Does it taste good, or like banana flavored cardboard?

It's very easy to make and tastes really good. It's not too dry like a lot of low-fat recipes. The honey adds a different flavor than we're used to. But, still very good. I threw in a handful of chopped strawberries. You could also throw in a handful of dark chocolate. YUM!
